3-A Sanitary Standard for General Requirements Revised

3-A Sanitary Standard for General Requirements, 00-01 is the second publication of the “A” Level Standard which was first published as 00-00 and represents the tremendous contribution of work by 3-A SSI Working Group 14 (General Requirements). Immediately following publication of the 1st edition in late 2014, Working Group 14 Members reconvened to address comments that were tabled for resolution until the first revision.

The resolution of comments required nearly two years of effort. All comments were resolved to the satisfaction of original commenters and of the original 60+ comments, 28 proposed changes were identified as substantial. These items were balloted and all but six were approved by the Working Group. All comments were reviewed and 22 Working Group proposed changes proceeded to the 3-A SSI Steering Committee for final approval. The revised 3-A Sanitary Standard for General Requirements, 00-01 is effective and replaces the previous 1st edition.

From the outset of this major project, it was emphasized that 3-A SSI documents are not static. The criteria continue to evolve to reflect new technologies and applications.  Through the process of reviewing comments and reballoting for the 2nd edition of the 3-A Sanitary Standard for General Requirements, Working Group Members uncovered even more new items for future discussion. These items were presented to the 3-A SSI Steering Committee for their approval and referral work. Meetings will resume to begin the discussion of these approved revision projects under the next revision cycle.

Project B-102-00-A, Tentative 3-A Sanitary Standard for Unitized Equipment for Automated Milking Systems

Automation seems to be the latest buzzword and legacy industries are rapidly adopting automation in every sector including food processing equipment. Evidence of this can be found in 3-A SSI Working Group 9 (Farm & Raw Milk Equipment) with work on a new 3-A Sanitary Standard for Unitized Equipment for Automated Milking Systems. Since first meeting in June of 2015, members are seeing great progress and are already embracing the hygienic design requirements the dairy industry demands for equipment that is cleaned in place (without disassembly) and is easily inspectable. Current “B” Level Revision Projects

3-A SSI Working Groups are actively drafting and discussing revisions of current Standards and Accepted Practices in our new “B Level” format. The “B Level” Standard uses the 3-A Sanitary Standard for General Requirements as a Normative Reference.  Under this tiered system of standards, users of the Standards and Accepted Practices will be able to easily address only those additional criteria or exceptions to the General Requirements Standard.
